Burn Stewart Distillers Unveils New Black Bottle Scotch Whisky

Black Bottle is a premium blended Scotch Whisky which was acquired by Burn Stewart in 2003, and is currently exported to over 30 countries globally.

After 18 months of extensive global consumer research and design development, the new Black Bottle heralds a return to the original Scotch, which the Graham brothers created in Aberdeen at the turn of the 19th Century.

Burn Stewart Master Distiller, Ian MacMillan, was charged with creating a product which would be more in keeping with its original north east recipe. The result is a curiously rich and slightly smoky taste that maintains the distinctiveness of Black Bottle but adds another layer of depth to the liquid.

Ian MacMillan said: “The challenge was to develop a liquid that was more in line with the original character of Black Bottle while maintaining all of the quality for which the brand is renowned. I wanted to reintroduce a richness to balance the smokiness of the blend and in turn allow each component to contribute to the overall flavour.

“This whisky will appeal to the experienced blended drinker who enjoys drinking Scotch neat as well as those exploring whiskies for the first time and who prefer to add a mixer. Restoring the blend to its former glory has been a rewarding and nostalgic experience as it has given me the opportunity to revisit the original identity of Black Bottle.”

Burn Stewart will launch Black Bottle in new packaging, re-introducing the distinctive black glass bottle which was the original inspiration behind the name of the brand. This iconic bottle was used by the Graham brothers up until the outbreak of the First World War when supplies from the German manufacturer ceased and they were forced to revert to a standard green glass bottle which has remained until the present day.

“It was thought that no examples of this once-famous black glass bottle survived,” says Marco Di Ciacca, Senior Brand Manager for Burn Stewart. “However, after months of searching, we managed to find a bottle dating back to 1906, which then became the inspiration for our new design. This new look is in line with the growing global consumer trend for premium spirits with authentic and compelling brand stories.”

Black Bottle has been available to buy in the UK from October 2013 in selected on and off trade outlets. The brand was also launched internationally into selected export markets from October.

The Maritime Malt

Old Pulteney 1990 Vintage was matured for around 23 years, from the 1990 to 2013, in Pulteney Distillery’s warehouses in the town of Wick, right on the windswept Caithness coast. The northern, coastal location of the distillery and its bonded warehouses plays a vital role in developing Old Pulteney’s unmistakable character.

The town of Wick where Pulteney Distillery was established in 1826, was once a busy herring fishing port with as many as 1,000 vessels in its harbour at peak times. In-keeping with Old Pulteney’s maritime heritage, the 1990 Vintage is presented in a tube featuring a ship decking effect, a porthole stamp and Old Pulteney’s classic herring drifter.

Thursday 7th November saw Scotland’s top licensed venues crowned at the annual SLTN Awards in Glasgow and Edinburgh’s Whiski Rooms was honoured as Whisky Bar of the Year. Only two years after opening, the venue was clearly delighted with the accolade.

Loki Challenges Thor to Lay Down His Mighty Hammer

Loki, one of the most treacherous and mischievous characters in Norse mythology has turned on his adopted and earnest brother Thor for taking all the glory in last year’s whisky launch stakes by trying his hand at creating his very own Highland Park expression.

Highland Park Loki, a 15 year old limited edition single malt bottled at 48.7% abv, comes housed in the same unique and award winning wooden frame as Thor, echoing the fearsome contours of a traditional Viking long ship.

Loki is the second in The Valhalla Collection of four unique whiskies from Highland Park, taking inspiration from the legendary Nordic gods of old and continues the ground‐breaking achievement of creating Thor – a 16 year old malt actually designed around the personality traits of an individual. The Orkney whisky maker has now created a unique flavour profile for its follow up. While unquestionably Highland Park, this time it mirrors the unpredictable, shape‐shifting LOKI character and as with the trickster god of fire himself, all is not as it seems.

There are classic traces of sweetness and spice, but it has been matured in both traditional Spanish sherry casks and also some heavily peated casks, giving it a smoky punch, while retaining a light colour. The finish is intriguing and complex. It is a whisky constantly changing, chameleon‐like, from appearance to finish and the few lucky and expert palates who have savoured it describe it as “enigmatic” and “truly another whisky of the Gods.”

Tasting Notes:

Nose: A spirited lift of dried bitter orange which quickly turns into lemon peels. Cardamom notes trick then tease the nose, before an enticing hit of gingerbread develops. With water, liquorice and aromatic smoke are both unleashed.

Palate: The true shape‐shifting ability of Loki springs to life on the palate: its waxy texture is amplified by an intense smoke that doesn't appear on the nose, shattering the light citrusy illusion of the aroma. All is not what it seems. The smoke fades as liquorice and rich spiced apple flavours come out to play. Lemon and grapefruit are consistent throughout this elusive, yet intriguing character. With a touch of water, lingering notes of melted dark chocolate over spent embers leave a soft smoky impression.

Finish: As Loki departs, he leaves behind toasted cloves, hickory smoke and soft vanilla. It is constantly changing, from appearance to finish. Loki is an enigma and truly another whisky of the gods.

Auchentoshan Single Malt Lowland Scotch Whisky, the only single malt in Scotland to triple distill every single drop, introduces Auchentoshan Virgin Oak Limited Release. This complex, non-chill filtered expression is Auchentoshan’s first ever whisky to be exclusively matured in virgin North American oak casks, wood which has previously been untouched by any other spirit. This aging technique is quite unusual in Scotland, where the majority of the whisky is matured in ex-bourbon or ex-sherry casks. New Japanese TV Series About Whisky Distillery

Wanted: A female aged 25 to 40 who grew up in the West and boasts a better than average singing voice. The opening is for an actress to play the heroine in a new NHK morning drama.

It will be the first time the broadcaster will have a non-Japanese play the female lead in the legendary 15-minute time slot that starts at 8 a.m. Monday through Saturday, NHK spokeswoman Kaori Fujieda said in Osaka.

The upcoming series will be titled “Massan,” and will be about a Scottish woman who married a Japanese trying to start a whiskey distillery during the Taisho Era early in the 20th century.

The morning slot has entertained the nation for more than five decades. Its leading female roles have been the springboard for a number of young actresses’ careers, including Ayako Kobayashi, whose “Oshin” series has been aired in more than 60 countries.

Each series runs about 150 episodes over six months. “Massan” is to air from next September to March 2015. The current series “Gochisosan” ends next March and will be followed by “Hanako to An” before “Massan” starts.

The story will be set in a time when whiskey was little known in Japan. The heroine will meet Massan, the son of a sake brewer, in Scotland, follow him to Japan and marry him at a time when international couples were a rarity. She learns the language and local manners, lives as a Japanese and supports her husband and his employees at the distillery he establishes in Hokkaido.

Spokeswoman Fujieda said NHK is asking domestic and overseas talent agencies to hunt for female candidates aged 25 to 40 who grew up in Western society. The network “basically” wants a Caucasian, but is open to a half-Japanese — or even three-quarters Japanese, if she is qualified, Fujieda said.

Experience won’t be a requirement, but someone confident in her singing is desirable, as Scottish folk songs sung by the couple will be a key element of the drama, Fujieda said.

The screenplay will be written by Daisuke Habara, known for his work on films such as “Pacchigi!” (“Break Through!”) and “Hula Girls.”

The drama will be based on the life of Masataka Taketsuru, the pioneering whiskey maker from Hiroshima Prefecture who strove to make the first Japanese whiskey at what is now Suntory Holdings Ltd. in Kyoto and later founded what is now Nikka Whisky Distilling Co.

The son of a sake brewer, Taketsuru went to Scotland in 1918 to study the art of how to make whiskey. There he met the love of his life, Jessie Roberta Cowan, known as Rita, who accompanied him back to Japan and provided him with vital support in his endeavors, according to his biography on the Nikka Whisky website.

“I have been working in this business for 60 years and if someone told me just five years ago Rye Whiskey was going to be one of the hottest categories in the spirits industry, I would have balked at the notion,” said Jimmy Russell. “To be completely frank, we didn’t realize bartenders had such a passion for it. Given the bartending community can be directly attributed for the current resurgence in Rye and classic cocktails, we had to listen and take the necessary steps with our available aged stock to bring 101 Rye back.”

The Wild Turkey Distillery will continue to make Wild Turkey 81 Rye, a distinct Rye whiskey launched in March 2012 made from a mingling of four to five year old Rye whiskey that is available nationally.

Whiskies of the World Announces 2014 San Francisco Event

Fans of whisky will be able to sample a wide range of exclusive brands at the upcoming Whiskies of the World (WoW) Expo to be held on The SF Belle Hornblower Yacht on Saturday, March 29, 2014.

Known as the oldest consumer-tasting events in San Francisco and one of the most innovative in the country, the festival has grown over the years to become a much-anticipated San Francisco staple. Each year, the Expo attracts over 1200 high-income spirits lovers and presents well over two hundred whiskies, from well-known brands to small independent bottlers.

Last Whiskies of the World Expo sold out weeks before the show, and received excellent reviews from the attendees as well as participating brands. “Whiskies of the World has a very balanced grip with a lot of new consumers each year,” says Diageo Master of Whisky, Steve Beal, whose company has been making its appearance at Whiskies of the World San Francisco since its foundation. “It also provides an entertaining, responsible, fun platform to get our message across. I get lots of rave reviews from consumers.” Robin Coupar, brand ambassador of Campari America, is happy to comment on the quality of the event, and the whisky drinker profile in general: “There were a lot of younger consumers and a lot of women too.”

The Expo 2014 will be hosted on the restored elegant SF Belle Yacht, the exclusive venue for the Expos for several concurrent years. The yacht will remain docked throughout the evening. Peter Lemon, the spirits writer for TheCask.com blog, comments on the quality of the venue: “Having a large-scale whisky event on an elegant, docked riverboat is a much nicer setting than a sterile hotel conference room.” The venue will be able to offer to a discerning whisky drinker four hours of sumptuous sampling on three ballroom-size tasting decks, and a cigar and whisky pairing Masterclass on the open roof top deck, all while being on the water and enjoying the bay’s beautiful skyline.

The festival will focus on education, while providing entertainment, and will be enlightening for whisky novices and experts alike. This is a once-a-year opportunity to discover just how complex and fascinating whiskies are with their unique flavors and aromas, as well as with their own distillation and maturation processes. Glenmorangie Ealanta Named 2014 World Whisky Of The Year

Glenmorangie's Ealanta has been named the World Whisky of the Year by Jim Murray, one of the world's leading whisky experts.

In his 2014 Whisky Bible, Murray pays tribute to the quality of the Private Edition Single Malt Scotch by describing it as having "one of the longest finishes of any Scotch this year...and borderline perfection." It scored 97.5 out of 100 points, the highest awarded this year.

This year 4,500 whiskies were tasted, evaluated and rated by Murray, who was blown away by Ealanta's innovative aroma and taste profile. Jim Murray's Whisky Bible is published annually and is regarded as a benchmark for the category.

Glenmorangie's Ealanta was released at the start of 2013 as the fourth annual release in the company's award-winning Private Edition range. The expression is yet another testament to the brands commitment to perfection; fitting seamlessly into their 'Unnecessarily Well Made' campaign. The greatly anticipated fifth release is set to arrive next year.

Ealanta is a 19 Years Old Glenmorangie expression, fully matured in virgin American white oak casks with a provenance that stretches all the way to the Mark Twain National Forest in Missouri.

Actor Scott Eastwood Helps Crown Winning Team At First-Ever American Honey Bar-sity Athletics World Championship

This past weekend, Sin City became the center of the social sports universe, as American Honey®, the original honey bourbon liqueur, held the first-ever American Honey Bar-sity Athletics World Championship at Hard Rock Hotel & Casino. On Sunday, October 27th, 2013 Seattle-based Westland Distillery released the first bottling of its flagship American Single Malt Whiskey at their facility in SoDo, located at 2931 First Avenue South.

Westland’s American Single Malt Whiskey serves as the core expression of the Distillery’s house style. Made from a grain bill of five different malted barleys and matured in heavily charred new American oak casks, the whiskey offers a uniquely American-style single malt to the market. "The Pacific Northwest has all the ingredients needed to create a single malt that can stand with the best whiskies in the world," says Westland’s President Emerson Lamb. "It is home to some of the best barley growing regions and highest quality water sources found on earth. For us, Seattle was a natural place to build our single malt whiskey distillery."

Westland’s 13,000 square foot distillery in SoDo houses a 5,000-liter mash house, five 10,000-liter fermenters, and two copper pot stills (7,570-liter and 5,670-liter, respectively). On this system Master Distiller Matt Hofmann oversees production of approximately 100 full-sized casks of single malt whiskey each month. He describes Westland’s house style as distinct in the global category of single malt. "Our whiskey is distilled in the Scottish tradition, but matured in the American style," says Hofmann. "This approach gives us a flavor profile marked by a sweetness and ease on the palate accompanied by a fruity and complex but ultimately grain-focused finish."

Chef Daniel Boulud and The Dalmore announced today that The Dalmore Selected by Daniel Boulud, the world’s first single malt scotch whisky created in collaboration with a Michelin-star chef, is now available for purchase both in-store and online in top fine wine and spirits retailers across the US. With an RRP of $200, this limited release of only 1,000 bottles has been recognized by the International Wine & Spirit Competition with a Gold Medal. “I have always appreciated the craft of a fine whisky while growing up in Lyon, France,” says Chef Boulud. “In recent years, I started seeing an increase in the popularity of brown spirits, both in my restaurants and among food enthusiasts. I wanted to connect this appreciation of Scotch whisky and elevate the spirit to become an integral part of the fine dining experience, bringing a new, high-quality and very personal product to my customers.”

The process of creating The Dalmore Selected by Daniel Boulud occurred over six months and three different visits to New York City by The Dalmore Master Distiller, Richard Paterson. Paterson first selected 10 whisky samples from The Dalmore distillery, chosen specifically to align with Chef Boulud’s flavor preferences and unique cuisine. Each sample had matured in a range of oak casks, previously filled with different wines and spirits ranging from Bordeaux wine barriques to 30 year oldMatusalem Oloroso Sherry casks.

With collaboration from his sommeliers across his many NYC restaurants, Chef Boulud selected his three favorite samples that spoke most strongly to his palate— specifically whiskies aged in Muscatel, Madeira and Port wine casks. The final assemblage of these three casks was then created by both Chef Boulud and Paterson, with these whiskies being left to marry and harmonize in upstanding sherry casks until now.

“The Dalmore Selected by Daniel Boulud is a co-creation, a true collaborative project between me and Chef Boulud,” says Paterson. “It’s very easy for anyone to simply put their name on a label, but Chef Boulud went above and beyond that, giving input that truly affected the outcome of this whisky. His selection of Muscatel, Madeira and Port wine casks, for example, was a combination of woods that I have never used before when creating whiskies for The Dalmore. This creation is something totally new and different in the Scotch whisky category, an assemblage based not on my own traditional experience, but rather on the well-seasoned palate and preferences of a fine chef.”

Bottled at 44% alcohol by volume and aged up to 23 years, the body, structure and flavor profile of The Dalmore Selected by Daniel Boulud perfectly complements Chef Boulud’s cuisine and palate. The expression is generous and full-bodied, with aromas of tarte tatin, oranges, pralines and crushed almonds at the nose, and hints of creamy fudge, Turkish delight and black maraschino cherries at the finish.

“It is my belief that Scotch whisky does not have to be an afterthought at the end of a meal— rather, it can be enjoyed with fine foods that complement its intricate flavors because it has a similar complexity to wine,” says Chef Boulud. “When we launched this expression in my New York restaurants this year, we created a special whisky tasting menu at each location that not only paired the whisky with each dish, but actually infused whisky into each course. This authentic and unique blend will always have a place at my restaurants, and we will feature it on special occasions, as we did recently during the 20th anniversary tasting menu event at DANIEL.”

The Dalmore Selected by Daniel Boulud has already earned seals of approval from star chefs, food writers and key players in the restaurant and beverage trade, and is also available for $50/glass at all six of Chef Boulud’s New York City restaurant properties, including DANIEL, Cafe Boulud, BouludSud, db Bistro Moderne, Bar Boulud and DBGBKitchen & Bar.

How Chemistry Can Explain the Difference Between Bourbon and a Tennessee Whiskey

Whiskey drinkers know that the moment they swirl a bit of the smoky spirit in their mouth, they’re bound to find a world of flavors: some oak, some smoke, a little vanilla, maybe a slight bite from tannin. Brown liquors — from scotch to bourbon and all the whiskeys in between — are complex spirits that lend themselves to purposeful tasting, creating connoisseurs willing to shell out top dollar for the most peaty scotch or their favorite spicy bourbon. When it comes to the magic of whiskey, their complex profiles might be explained by the chemical fingerprints that separate them from one another — and change the way that they taste.

It’s an idea that the aptly-named Tom Collins, a researcher at the University of California, Davis, is actively pursuing. “I worked on my Ph.D., and it was a project looking at aroma and flavor chemistry in wine [fermented] in oak barrels,” Collins explains, crediting the barrels with sparking his initial interest in the chemistry of spirits. “It sort of seemed a natural extension to look from the chemistry of wine to the chemistry of whiskeys, because the chemistry of oak barrels play a huge role in what you see in whiskeys of all sorts.”

Collins and researchers at Davis set out to see if they could determine the chemical differences among 60 different whiskeys: 38 straight bourbon whiskeys, 10 rye whiskeys, five Tennessee whiskeys and seven other American whiskeys, varying in age from two-to-15 years old. What they found was a spectacular testament to the spirit’s complex chemistry–over 4,000 different non-volatile compounds across the different samples, results which he presented today at the 246th National Meeting & Exposition of the American Chemical Society. “It’s very complex,” Collins says of the chemistry. “There are components that are barrel derived, as we would expect, but there are also things that are related to the grains that are used to make the distillates in the first place—so the corn and wheat and rye and things that are fermented to form the distillate. We see some components that appear to be grain related, and there are also likely to be components that are derived from the yeast that are used do the fermentation.”

Of the thousands of chemical compounds Collins found, there was a fair amount of overlap between the different spirits. But Collins found that each spirit contained unique compounds, or unique concentrations of compounds, that he could use to distinguish a scotch from a bourbon, or a Tennessee whiskey from a bourbon, simply by looking at the liquor’s chemistry. “If you try to make sense of all of the components that are there, it’s essentially overwhelming, but if you filter out the things that are not used in Tennessee whiskeys, or things that are only present in some of the bourbons, you can sort of whittle away down to the things that define what a bourbon is or what a Tennessee whiskey is chemically,” Collins said.

It might be the perfect answer that eternal question of novice whiskey drinkers everywhere: what exactly is the difference between a whiskey and a bourbon?

The confusing answer is that bourbon is always whiskey, but all whiskey isn’t bourbon. This has always been true from a historical and regulatory perspective. Historian Michael Veach spoke with Food and Think in June and dispelled the myths that bourbon has its roots in Bourbon County, Kentucky, and that all bourbons must originate there. “‘People started asking for ‘that whiskey they sell on Bourbon Street,’ Veach says, ‘which eventually became ‘that bourbon whiskey.’”

The regulatory distinction presents a slight complication: some Tennessee whiskeys, from a regulatory standpoint, actually qualify as bourbons, but choose not to market themselves as such (Jack Daniels, for example, adamantly markets itself as a Tennessee whiskey, even when it meets regulatory standards for being a bourbon). Natalie Wolchover at Live Science outlines the regulatory standards for bourbon:

While bourbon whiskey has its roots in Kentucky, and continues to be primarily produced there, it is now manufactured in distilleries all over the United States. Manufacturers must meet the following requirements in order to advertise their whiskey product as “bourbon”:

It must be produced in the U.S. from a grain mixture (called “mash”) made up of at least 51 percent corn. It must be distilled to a maximum strength of 160 proof, bottled at a strength of at least 80 proof, and barreled for aging at no more than 125 proof. It must be aged in new, charred oak barrels. To qualify as “straight bourbon,” the spirits must meet the above requirements as well as being aged for at least two years and containing no added coloring, flavoring or other spirits.

Many bourbon whiskey distilleries in Kentucky advertise their use of unique water filtered by the limestone shelf in Bourbon County; while this feature may add to the allure of Kentucky bourbon whiskey, the federal trade regulations do not stipulate about what water must be used.

Collins thinks he might have a more chemically elegant answer to the conundrum. As his team discovered, there are 50 to 100 chemical compounds such as fatty acids and tannins that can be used to distinguish a Tennessee whiskey from a bourbon to such an extent that Collins can tell the difference between them without tasting either. Chemically, it’s often a question of concentration–how much of a plant derived compound does a spirit have? How much tannin? “There are, in many cases, certain compounds that are only found in one or the other, but more often, there are compounds that are present in both but at different concentrations. Those are the tannins, the fatty acids, and in some cases, turpentine – compounds that are plant-derived.”

These compounds complicate the matter further–certain chemicals are extracted from the wood barrels during the aging process, which might not be unique to the distillate itself. As Collins notes, barrels are, after all, made from trees–an unarguable plant substance. So how do they discern the unique plant-derived elements in the distillates from the compounds that might come from the barrel? “Some of the ways we get through that is to look at whiskeys that have been freshly distilled, and haven’t been put in barrels yet, so we can see what’s there in the fresh distillate before we put it in oak, and then we can see what changes between the newly distilled spirit and the spirit that has been aged in barrels for some period of time,” Collins explains. “That helps us to understand what the things are that come from the barrels, versus the things that come from the distillate itself.”

Collins and his team have yet to embark on the next step of their experiments–relating the differences in chemical makeup to potential sensory differences in aroma and flavor–but he feels fairly confident that the two are related. “I think–being a chemist–that the sensory differences arise from the chemistry,” Collins admits. Take, for example, the chemical compounds that arise when the spirit is being aged in a charred barrel. “The sensory component that you smell, that you associated with toasted oak, or charred oak, is going to be related to the compounds that are extracted by the whiskey from the wood,” Collins explains.

Understanding the delicate interplay between chemistry and aroma could be a huge help to distillers looking to tweak their whiskey to encapsulate that perfect blend of smoky and spicy. “This could be a tool [distillers] could use to understand if they make a change to their distillation processes, how does that impact the resulting whiskey,” Collins said, noting that the better distillers understand how the process of distillation impacts the final product, the better they can manipulate the process to their advantage. “It’s a tool that can be used by distillers large and small to understand the impact of what they’re doing on the chemistry, and then the sensory.”

It’s research that means that the perfect whiskey–smoky, spicy, or however you want it–might not be so elusive after all.
